The NH Collection Maldives Reethi Resort has unveiled Caravela, a truly immersive fine-dining concept in the UNESCO-protected Baa Atoll. It’s not just dinner—it’s a story-driven culinary voyage inspired by the great maritime expeditions of the Age of Discovery.

Dinner-only, intimate communal table for 12 guests.

Concept:
Each course is a “chapter” tracing historic voyages, blending Spanish culinary heritage with Maldivian provenance.

The Atlantic Voyage of 1487
- First Light of the Atlantic – King Crab fritters with ikura & lime-yuzu vinaigrette.
- Winds of the Cantabrian Sea – Torched Maldivian tuna with escabeche & Moroccan spices.
- Crossing the Madeira Currents – Local job fish with plantain purée & prawn coral tuile.
- Benguela Shores at Dusk – 12-hour sous vide pork belly with smoky chilli & chorizo jus.
- Triumphant Return to Iberian Coast – Olive oil cake with port wine & blood orange gel in a sugar sphere.
- Petit fours: caramelised torrija, coffee chocolate bonbon, South African milk tart.

Curated by Resort Manager Melroy Fernandes, a Master Sommelier, alongside the resort’s sommelier team—each course is paired to enhance the narrative journey.
